In general, I like taking underdeveloped corners of a canon and expanding on them. I like feeling like I left the world of the canon a little bigger than I found it. What this generally means in practice is that I tend to prefer writing about side characters rather than the main ones! This is a general preference, not a hard rule, of course.

Unwilling to address:
I'm not interested in writing anything that is outright pornographic; defined here as something where the main goal of the piece is to get to sexually explicit material. I have no qualms with writing sexually explicit (and violent, for that matter) material, but it should be in service of a story and not its aims.

The above also includes fetish stories, where there may or may not be anything strictly speaking sexual happening, but the goal of the story is nonetheless to get to the subject of one's paraphilia.

There's nothing wrong with fetishes and pornography, I'm just not comfortable custom-making it for a specific person.

I would also like to avoid the subjects of child sexual abuse and suicide. This does mean that if your desired romantic pairing is between an adult and someone who is not an adult, you should look elsewhere.

Finally, while I am not opposed to writing AU fic in general, I'm not interested in writing fic set in AUs where the purpose of the AU is to subtract drama and stakes from the original work - your classic Everyone-Works-In-A-Coffee-Shop AUs, for example.

Other notes:
As you can probably tell from a perusal of my Ao3 profile, I tend to write introspective fic exploring corners of the story - bits of worldbuilding or characters - that are more obscure or underdeveloped. I'm not much for romantic fluff; it's not what I read, and it's not my natural mode of writing either. If you want light shippy content, I'll do it, but there's almost certainly other writers who your money would be better spent bidding on.

I would prefer to work from a prompt that describes the basic concept and tone, and then we can have a brief back-and-forth about what the expectations for the piece are. But once I have the concept laid down, unless I have questions for you or find I want to change the direction of the piece, I'll basically retreat into my workshop and then emerge later with a finished work for you.

The worldbuilding decisions of a given canon are definitely of interest when I am thinking about meta, as well as characterization decisions that go along with it. If the canon has a particular language of expression, that can also be an interesting platform to springboard on.

I have no interest in stories inside the incest taboo. I'm leery of abusive relationships uncritically portrayed as positive, so I am unlikely to produce meta that says someone's abusive relationship, either as a giver or a receiver, is healthy and positive for them. Communication is key, but I am flexible with the bidder's level of involvement. If you're happy to let me to run wild from a starting prompt, I can do that. I'm primarily a writer of angst and horror, though I've been known to dabble in fluff. If the story is about trauma, about making each other worse, or making each other better, or its a bunch of people being unhinged little weirdos, a true weirdo4weirdo, then I’m your guy!

Unwilling to address:
Writing het pairings isn't really for me. I also don't really do reader insert fics or character bashing (though if a critical look is necessary for the narrative, that is fine.)

As far as explicit subjects, I won't write anything with watersports or scat. I also can't write anything to do with the intricacies of being pregnant or giving birth, but mentions in passing are fine. My most specific one is if the pairing is JiuYuan, I almost always write Top!SY/Bottom!SJ, but I'd be willing to bend that if the idea is intriguing!

Most other topics would be fair game. I also don’t do crossovers, unless it’s something I know a lot about (pretty much only TGCF, MDZS, Thousand Autumns, Star Trek, and Star Wars) and I prefer canon or canon adjacent settings (as in Xianxia or Wuxia) over modern ones.

I like all sorts of prompts. If you just have a vague idea or some emotion you want to capture, that works! If you want to be involved with the whole outlining process, that works, too!
